50 Shades of Ray


Good Morning!  So today is my first day back to the real world after our vacation to Virginia Beach.  It was a real struggle to get up this morning.  I stayed up late last night for my FIRST fantasy football draft 🙂

My Fantasy Team name is “50 Shades of Ray”.  I just recently finished the trilogy “50 Shades of Gray” so I thought it suited well.  These books are soooo good by the way if you have not given them a try.  But anyways back to the draft, I decided to do one this year because Andrew is always so excited when this time of the year comes around and I thought this would be something fun for us to do together.  It took about an hour to get through the whole draft and if it was not for our friend Josh explaining everything to me I would have been totally lost.  By the time we FINALLY finished I was already half asleep but I am proud of my team.  Andrew and I are up against each other the first week haha;  this should be interesting.

This morning was one of those days where I have little motivation to go on my run but after my cup of green tea I started to feel a little better about it.  I did my 5 miles route in 44mins. It is very hilly but I like it for the reason that when I run on flat trails I feel like I am flying.

For breakfast I went with a fried egg and avocado with hot sauce on a bed of spinach :).  Hot Sauce makes everything taste so much better.  If you have never tried this, then I highly recommend you giving it a try…you could be thanking me later haha.  To go along with my egg I had a slice of my new pumpernickel bread I found in t.j. maxx last week.  A cup of vanilla chai tea with a splash of soy milk was a nice compliment to this scrumptious breakfast.

My cousin got me something similar to this last christmas but I have been unable to find it since then..until now. It has no preservatives, high in fiber, kosher, cholesterol free, natural ingredients, wheat free.  The slices are pretty big so I only had half.

After breakfast, I still had a little time to kill so I decided to take Chewbacca out to the dog park.  He plays so well with other dogs.  This time there was a little chiwawa mix, Rosey, that Chewbacca kept harassing.  The owner said that it was karma for Rosey because she would harass there other dog all the time.  The other pet owners in a neighborhood are so friendly and I love swapping pet stories and pet advice back and forth with them.

Now it is time to go back to work after my 5 days off.  I am actually looking forward to it because I made some of my Funfetti 7Up cupcakes for all my coworkers to try.  I hope they like them!

Andrew and I just got back home from an amazing 3 day trip in Virginia Beach.  The first day we got there we played in the pool, hung out in the hot tub, took a bike ride down the boulevard, and made dinner for Kent as a Thank You for allowing us to stay at his gorgeous house.  We went with Salmon, string beans, and potato salad.

So, I absolutely love Virginia Beach minus one detail…JET NOISE!  Kent actually said that it gets so loud sometimes that it shattered his windows one day.  There is an air force base located right around Virginia Beach, which is why we were always hearing them.  I thought I would get used to it after while…but that never happened haha.

For our delicious/huge piece of salmon all we did was squeeze fresh lemon juice on it and put a few slices on top of it for it to cook.  We baked it for 40-45 mins at 350 degrees.  

The potato salad is a recipe from Andrew’s mom.  She is italian so everything she cooks is amazing!

Murphy Potato Salad

3 red potatoes

1 small red onion, chopped

roma tomatoes

garlic powder

italian seasoning

salt & pepper

olive oil

First, cut the potatoes into 1 inch bite size pieces and then boil them till tender.  Once they are nice and soft drain the water and transfer them to your serving dish.  Cut all the roma tomatoes in half and toss them in along with your chopped red onion.  Add approx. a tbsp of garlic powder, 1 tbsp italian seasoning and salt and pepper to taste.  Be generous with the olive oil and then mix all together.  You can either serve them hot right then or stick them in the refrigerator for a couple of hours to eat chilled.  They are delicious either way.

The next morning Justine and I agreed to wake up early and go for a run down the boardwalk and beach.  My alarm went off but I kept pushing snooze.   It was just one of those morning for me where it just took a little extra time to get me going.  If it were not for Justine excited about our run I probably would have tried to skip..thank goodness for Justine!  We ran about 3 miles on the boardwalk and then did sprints on the beach for out last mile.  It was so humid there that I was exhausted by the end of that.

We stopped by a cool coffee shop Justine had spotted on our way in yesterday called “Bad Ass Coffee”.   They definitely lived up to there name.  We both got a blended coffee with sugar free vanilla and hazelnut…I downed it before we even made it back to the house haha.

By the time we got home we only had about an hour to eat breakfast and get ready to go out SPEAR FISHING!  Kent has been spear fishing for a few years now and was nice enough to take us out and show us how it is done.  Im not gonna lie…I was really nervous/excited.  Andrew and Kathryn were more anxious then me and Justine.

Kathryn shot the first fish and Andrew shot one right after her, a sheepshead.  By the time we were done snorkeling and spearfishing we were all starving!  You could tell because everyone was getting a little testy….especially me.  If I do not eat at least every 4 hours my personality can do a complete 360 on you….It’s a horrible quality I know but I am working on it.  Does this happen to anyone else?

Spear fishing was such an amazing adventure.  It takes you back in the primitive nature to when people had to hunt for there food every day.  I would probably be the first to starve to death if this was how we still lived haha.

Kathryn and Kent decided on taking us to Ruddy’s for dinner.  The tables were swings….it was so cool!  They have a specialty drink called Ruddy’s Ruckus there that we all treated ourselves to.  The restaurant limits each person to only 2 drinks.  It hit me all it once and I was feeling pretty good 😉

This was such a great trip!  We will probably never have a chance to spear fish again and not many people can say that they have gone spear fishing before.  Thanks again to Kent and Kathryn for being great host!  Now its back to the real world.  Luckily it is only a 2 day work week 🙂

Concert Date Night


So last time I left y’all I was going to My Morning Jacket & Band of Horses Concert at the Raleigh Amphitheater.  The concert was awesome!  This was my first time in the Raleigh Amphitheater, it is relatively new.  It is located right on the outskirts of downtown so you can easily walk from having dinner downtown to the theatre.  The theater is not very big, which worked out for us since we had lawn seats because we had a great view the whole time.  Andrew, I and a bunch of our friends are going to the Florence and Machine Concert in September and it is also at the Raleigh Amphitheater….I CAN NOT WAIT!  They are my favorite out right now!

Band of Horses

There seemed to be a guitar solo in nearly every song.  Andrew has been a big fan for awhile so he recognized most of the songs,  I was a newbie so I only recognized there popular songs.  But they are great entertainers.  The lead singer of My Morning Jacket was wearing a ridiculous blue shirt/table cloth.  I didn’t really understand the fashion statement he was trying to make but with that voice he can get away with wearing anything probably.

The next morning, I got up early and did a cross train workout.  I tried out the “Can’t Stop, Won’t Stop” workout.  It took me about 35mins to complete and I was huffing a puffing by the end of it.  It was a great workout and I will definitely be doing it again when I am not in the mood to run.  When my body is not in the mood to run I try to find something different to try to keep me motivated to still get my workout in for the day.  What do you do to motivate yourself when you are not in the mood to run or workout?

After my sweaty/successful workout I showered, had a Peachy Keen Smoothie and then we headed out for Virginia Beach for the next 3 days! I have been so pumped for this vacation.  Andrew and I have not had a real vacation all summer.  We are going with our roommate, Justine and Kathryn, and staying with Kathryn’s Uncle, Kent.

I had all the essentials packed for the car ride.  As you can see in the picture below I barely had room for my feet haha. We had Chewbacca’s leash, drinks, snacks,CD’s, Chewbacca treats, magazine, laptop, and a few other random items.

We just arrived at Kent’s and he has an amazing house.  He is located just a few blocks from the beach and he has a hot tub and pool in his back yard.  Well we are about to head to the grocery store and ABC store 🙂 I hope everyone has a great Monday!

Wine Bottle Lanterns


This morning I had my first Hot Yoga experience.  I have been hearing so much about it recently that I decided to give it a try.  It  gives you a deeper stretch then regular yoga since your muscles are so loose in the heat.  After my 8 mile run yesterday I needed a good stretch.

I picked out a beginner class at Arrichion Study called TOPAZ.  Topaz means fire or heat in Sanskrit.  The class had a series of 32 postures to help stretch and warm muscles and ligaments; improve balance, and increase strength and flexibility.

The woman who checked me in at the front desk was showing me around the study and told me that it was really important to stay in the room the whole time for my first class so my body can adjust.  I didn’t think anything of it, I mean seriously it can’t be That Hot?  As soon as I walked in the yoga room I started sweating.

Overall, I really enjoyed the class and I will definitely be going back for more.  This will be a great post long run workout for me to do from now on.  By the end of the class I was completely drenched.  I highly recommend in trying out a hot yoga class and bring a big towel with you..i made the mistake of only bringing a small hand towel, but ill be more prepared next time.

As you can see everyone else had BIG towels to place on top of there yoga mats…..minus me. I was sliding all over the place.

After Hot Yoga I came back and took Chewbacca for a little run/walk.  He only made it about 1/2 mile.  It is still too hot for the little guy.  I can not wait for fall so he can enjoy being outside again. 🙂

After showering and getting some delicious burgers at Earth fare (every sunday they have burgers for only $2..its a tradition for me and andrew to go whenever we are in town) I decided to tackle some of the items on my to do list.

I have been working little by little on my wine bottle lanterns and finally finished them today!  I am so excited to finally hang them up.  It was a fun craft to take on and look great on our back porch.

First, I needed to remove the bottom of my bottles.  I found a trick off pinterest that works great!  Me and Andrew had a lot of fun doing this, we just thought it was so cool how it just popped off.

Once that was finished I had to remove the labels from the bottle.  This was a bit tricky to get all the sticky off.  I found that by spreading a little olive oil over the sticky area and allowing it to sit for a few hours, made it a lot easier to remove.

Next, was assembling my hanger together.   I picked out some bendable wire from Michael’s craft store (I love this place!).  I chose a brassy color but you can pick whatever you like best.  First, you will need the cap to bottle beer and punch a whole through the center of it.  Scissors worked fine for me.  This will prevent the wire from coming out of the top of you bottle.

Then, I cut a length of 23 ins and looped one end through the whole in my bottle cap and wrapped it around a few times to secure it.  As seen in the picture.

To hold the candle, I cut another piece of wire that is approx. 11 ins long.  I made out a circle out a one end that was big enough to fit around the candle and looped the other end through whole in bottle cap and then wrapped it around a few times to secure it.  The finished product should like the image below.

Now you will stick your wire creation through the bottom of your wine bottle so that the loop is coming out of the top.  And VOLA!

Oatmeal Cookie Pancakes


This morning I did my best to sleep in and I made it till 8:45 till Chewbacca woke me up.

I let Andrew sleep in while I went on an 8 mile.  The weather was perfect for a long run today, it was windy and the sky was cast over.  The arch in my right foot started to cramp up during my last mile but I managed to make it home in 1 hour and 10 mins.

I decided on pancakes this morning for breakfast to start off my 5 day vacation! 🙂  I LOVE this pancake recipe.  The pancakes are so soft, moist and good for you!  They are made without any butter or sugar but they taste just like oatmeal cookies.  I surprised Andrew with chocolate chips in his pancakes.  I’m not a big fan of sweets for breakfast so I stuck with the original recipe for myself.

Oatmeal Cookie Pancakes

-1 very ripe banana

-1 tsp baking powder

-1 flax egg (1 tbsp flaxseed meal + 2.5 tbsp water)

-1/2 tsp vanilla extract

-1 tbsp cinnamon

-1 tbsp almond butter

-1 tbsp canola oil

-3 tbsp almond milk

-1/2 cup rolled oats

-1/4 cup whole wheat or unbleached flour


Preheat a skillet to medium heat.

Prepare flax egg by mixing flaxseed meal and water and letting set for 3-5 mins.

Mash your very ripe banana with baking powder.

Add flax egg, oil, salt, vanilla, cinnamon, almond butter, and almond milk and stir.

Stir in oats and flour until just combined.

Scoop 1/4 cup onto lightly greased griddle. (sprinkle chocolate chips on top if you want them to be sweeter)

Cook for 2-4 mins on each side – until golden brown.

Healthy Low-Cal Funfetti Cupcakes

My roommate, Kat, is moving to San Diego next week for an internship (for a few months).  My roommate and and some of our friends through her a dinner in celebration and as kinda of a farewell.  My roommate, Justine, made lasagna from was AMAZING.  I do not have that recipe but I hope to get it soon and share it with you.

I was in charge of dessert so I used this as an excuse to Pinterest a cool recipe.  I decided on the FUNFETTI 7UP CUPCAKES.
This is such an easy and simple recipe.  I will definitly be using this one again!  Everyone loved them and kept going back for seconds (Andrew had 4 haha).
FunFetti & 7Up Cupcakes
One box of funfetti cake mix
12oz of Diet 7 up antioxidant soda
Bake @ 350 for 20 mins and allot to cool for 30 mins before adding your iciing
For iciing
1/2 carton of Lite whipped cream
1 box of sugar free vanilla pudding
**I liked to add sprinkles ontop to give them some more PIZZAZ 🙂
Next time I think I will try it with chocolate cake and Dr. Pepper or Vanilla Coke 🙂

Avocado Egg Salad = DEEEElicious

Avocados have been my new obsession for the past few months.  There creamy smooth texture goes with nearly everything….I think.  Not only do they taste amazing but they are packed with essential nutrients too.  Like, fiber, potassium, vitamin E, B vitamins, and folic acids.
One of my favorite recipes is my avocado egg salad.  I had not made it in a while so I thought I would make it this morning and share it with everything because it really is just to good to keep to myself 🙂
In this recipe I added a pickle and some pickle juice just because I found some in the fridge haha…these are not essential to the recipe but if you like pickles then I highly suggest trying it with them.
3 hard boiled eggs
1 medium avocado
one pickle chopped (optional)
1 tbsp pickle juice (optional)
1 tbsp red pepper flakes
1 tbsp chili powder
1 tbsp garlic powder
salt and pepper
**You can add 2 tbsp of mayo if so desire (I just do not like it so I make mine without); or if you want to be more healthy you may add 2 tbsp of plain greek yogurt.
Boiling eggs
I am still testing new ways on boiling the perfect egg.  From what I have learned, I am letting the eggs get up to a rapid boil then remove them from the heat and cover the pot for 15-18mins.
Once my timer goes off I pour out the water and replace it with cold water and add ice.
Peeling is still not as easy as I expect it be though.
Does anyone have any helpful suggestions?
